I rubbed with The Gospel and Cow Cover and a little of that pepper and some Smoked Chili Salt.
TJ said the Tri Tip was chewy. It seemed to be ok. I know it was done early and sat out for about 3 hours before it was served. Need to make sure it is cut correctly, but the cook on it seemed perfectly done, just pink in the middle.
